We love Jesus and cocktails.

Scott worked in the beer industry for nearly 20 years before changing directions. He’s a phenomenal homebrewer, bourbon aficionado, wine-club member, and default bar manager at the Calvin household. That makes us equal opportunity consumers.

Daylight Saving marks the official kickoff of patio-drinking season, and the day we bust out all the ingredients for our favorite summer sipper: The Shangri-La Slinger.

Based on the Marfa classic Ranch Water, this easy-drinking spritzer is light, bubbly, and perfect for ride-on lawn mowing. It combines lime juice, Topo Chico, tequila, and a surprise key ingredient over lots of crushed ice.

We named the drink after Shangri-La Slough, the glorified irrigation ditch that backs our property and teams with blue herons, great egrets, turtles, North American river otters, and the occasional swarm of bees. It’s the perfect place along which to walk the dogs with a sunset cocktail on a warm night.

For your slinger, you will need:

  • Ice

  • At least two large, juicy limes

  • Topo Chico, Hint of Lime

  • Tequila

  • Mexican Squirt in a glass bottle

Start with a large glass filled about one-third of the way with crushed ice. Squeeze every drop out of the limes, and toss in one of the drained halves just for good measure. (I can never manage pretty garnishes.) Pour in a heavy glug of tequila. (Like, to the count of three.) Fill the remainder of the glass with Topo Chico, leaving room for one or two quick splashes of Squirt.

Stir, taste, edit, enjoy!
